Ham and Bean Soup

 

(This soup is delicious using the leftover ham & ham bone after a holiday)

 

1 lb dried great northern beans, soaked over night in water and drained

Ham Bone and 2 Cups Chopped Ham

6 Slices of Bacon

1/2 large onion, diced

2 cups ham, diced

3 cans chicken broth

1 tablespoon onion powder

1 1/2 tablespoons garlic powder

1 teaspoon pepper

2 tablespoons dried parsley

1 1/2 teaspoons salt

 

 

  1. In a large skillet, fry the bacon until crisp then remove from the skillet and crumble.
  2. Add the onion and ham and sauté until browned.
  3. In a large pot or a crock pot add the beans, bacon, ham/onion mixture, broth, garlic powder, onion powder & pepper.
  4. If using crock pot, cook about 8 hours.  Stove top will take a few hours.
  5. If the soup isn’t thick enough for your taste, crush some of the beans or add just a little cornstarch to thicken.
